Xendesktop connect to your hypervisor management environment (eg VMware vCenter) which can contain multiple hosts. Xendeskop does not “know” whether multiple hosts exist. Hypervisor management knows this.
A catalog has only one master image. When you want to update the machines in a catalog, you point it to the new updated master image. No way you can select a different master for a part of the catalog
