You could use differencing disks if all VMs had the same OS and save the most space, but since SQL uses Win 2008 R2, i guess it would be too much “administrative effort” to create differencing disks for the VMs

Agreed.
Question states a hyper-v “test” environment, so it is ok to use dynamically expanding.
In production we wouldn’t use dynamically expanding disks for those server roles.
