Saving power = saving $$, with say 4 esxi hosts and shared storage you can easily replace over 100 physical servers. There is a direct cost savings; power, HVAC, floor space, etc. Allowing users to self provision servers is a value-add that may never be implemented, if you consider V-switches (1000v) then you also end up decommissioning switches as well as servers.
